What Makes this Steak Fajita Soup Perfect

It has come to my attention recently, after posting my Creamy Chicken and Wild Rice Soup, that I am a bit of a soup addict. Its the original one pot meal and there are so many different things you can do with a good bowl of soup. I love this soup recipe because the flavor for it comes from my homemade fajita seasoning recipe. I love that recipe because I have enough to make the size you buy in the packet at the store and a recipe for a big batch so that you can always have it on hand.

Ingredients

  • 1/3 cup all purpose flour
  • 1/4 teaspoon black pepper
  • 1 pound stew meat
  • 4 tablespoons extra virgin olive oil divided
  • 2 tablespoons apple cider vinegar
  • 1 red pepper diced
  • 1 orange pepper diced
  • 1 red onion diced
  • 2 cloves of garlic minced
  • 3 tablespoons fajita seasoning
  • 32 ounces beef broth

Instructions

  • Whisk together the flour and black pepper. Lightly coat the pieces of meat in flour.

  • Heat a large stock pot over medium heat. Add 2 tablespoons extra virgin olive oil. Then add the beef to the pot in batches, cooking until browned and removing from the pan. Do not overcrowd the beef and cook it all at once.

  • Once all the meat is cooked and removed from the pan, add the apple cider vinegar and deglaze the pan, scraping up all the brown bits. Then add the vegetables and garlic, sautéing until tender and soft, about five minutes.

  • Return the meat to the pan, stir in the fajita seasoning, and then add the beef broth. Bring the soup to a bowl and then turn down to a simmer and cook for 20 minutes.

  • Serve with sour cream and all of your favorite fajita toppings.

What is the best steak to use for fajitas? ›

Skirt steak is the traditional cut used for fajitas. It used to be inexpensive, but now it's not so cheap; oftentimes flank steak costs less. Either will be a good choice.

How do you cook fajita meat so it's not tough? ›

How many pounds of fajita meat for 5 adults? ›

Which is better for fajitas flank or skirt steak? ›

Skirt Steak

This steak cut tends to have a heartier beef flavor than flank steak, making it a good option for tacos or fajitas with lots of ingredients that could overwhelm a milder steak. Use a marinade to tenderize the steak and add even more flavor before the cooking process.

What steak is the most tender? ›

Grilling Filet Mignon

Black Angus filet mignon is the most tender cut of beef used for steaks. It comes from the smaller end of the tenderloin and should be well-marbled. You can grill it or cook it in a skillet and is best served blue rare or rare.

What cut of meat do Mexican restaurants use for fajitas? ›

A fajita (/fəˈhiːtə/; Spanish: [faˈxita]), in Tex-Mex cuisine, is any stripped grilled meat, optionally served with stripped peppers and onions usually served on a flour or corn tortilla. The term originally referred to skirt steak, the cut of beef first used in the dish.

Should you cut steak before cooking fajitas? ›

Steak for fajitas should be cooked to rare or medium-rare for the best texture and flavor. 3. Slice thinly, against the grain. Cutting meat against the grain into thin strips shortens the muscle fibers, reducing the amount of work you have to do to chew them, and making even tough cuts taste tender.

How do you tenderize steak for fajitas? ›

Citrus: orange juice and lime juice tenderize the steak by breaking down the tough connective tissue. They also infuse the meat with bright floral tones characteristic of steak fajitas that complement the earthy seasonings.

Do you cut steak before marinating fajitas? ›

Fajita meat is marinated and grilled before it is cut into strips and served. The best way to get a tender slice of meat is to cut perpendicular to (across) the grain of the meat. Sometimes the grain is not straight across the whole piece of meat and can change direction several times, presenting a challenge.

Do you cook fajitas veggies or meat first? ›

This recipe promises to be a one-pan dinner, but to ensure that the chicken's juices don't steam the vegetables — making them soggy — cook the vegetables first. Transfer them to a plate or cutting board, then cook the chicken in the same pan before bringing things together.

What is the most tender meat for fajitas? ›

Flank is a pretty tender meat. Definitely shouldn't be slow cooked. I would reserve that type of cooking for tough cuts like short rib, chuck or eye round. Unless you like well done flank steak.

How do you keep fajitas warm for a party? ›

Wrap flour tortillas with foil and set aside. Get condiments ready. 4. Party time: One hour before serving place Pyrex dish with chicken (still covered tightly) in 325 degree oven for 45 minutes then put the foil wrapped flour tortillas in the over as well to warm through…about 15 minutes.

What kind of onion for fajitas? ›

There's no one-size-fits-all answer to choosing the right onion for your fajitas. You can go for the traditional white or yellow onions, offering a more savory option, or experiment with sweet onions like Vidalia or Walla Walla to add a subtle sweetness to your dish.

How can I tenderize steak quickly? ›

Salting. Most cuts of steak benefit from being salted up to an hour in advance of cooking, but especially tougher cuts. In addition to seasoning the steaks, salt helps break down proteins and make the meat more tender. Liberally salt the steaks up to an hour before cooking, then proceed according to your recipe.

What is the best way to tenderize steak? ›

Marinate with Acid

One of the best meat tenderizer methods is to marinate the meat. Not only does a tenderizing steak marinade imbue aromatic flavour, but the acidic ingredients in it also denature connective proteins in the meat.

What steak do most Mexican restaurants use? ›

In restaurants, skirt steak is the preferred cut for carne asada. But at home, you might notice that skirt steak is never as tender as it is in restaurants. That's because restaurants buy skirt steaks pre-marinated and tenderized using a special process from commercial meat processors.

What cut of meat is used traditionally for a fajita plate? ›

Steak Fajitas: While skirt steak is the traditional cut of meat used in fajitas, other cuts of steak can also be used, such as flank steak or sirloin steak. The steak is marinated in a mixture of lime juice, garlic, and spices, then grilled with onions and peppers.

What cut of steak do Mexicans use? ›

Falda – Flank

This cut is near the beef groin. Its fat content and tenderness have made it a prime choice in Mexico. This is a soft boneless cut to fry on a pan or grill. It has a lot of fat and if you go to a grilling, it's the one piece you can't miss out on.

What is flank steak called at the grocery store? ›

Other names for flank steak include London broil and skirt steak, which is actually a different cut (more on that in a moment). This cut of steak comes from the abdominal muscles of the animal, right behind its chest. As you'd expect from that muscle-y area, the meat can be somewhat chewier than other steaks.
